Avocado Black Bean Salad

This is my favorite salad to eat in the summer. The dressing is light, it’s simple to make and it tastes great.

 2 cups chopped romaine lettuce hearts
 1 avocado, chopped
 1 medium tomato, chopped
 ½ cup canned black beans, rinsed
 2 tbsp diced green onion
 1 tbsp olive oil
 2 tsp lime juice
 ¼ tsp lime zest
 ¼ tsp salt
 ½ tsp ground black pepper

Cooking Instructions


In a large bowl, mix together the lettuce, avocado, tomato, black beans, and green onion.


In a small bowl, whisk the olive oil, lime juice, lime zest, salt and pepper. Pour dressing over salad and mix well to coat.
