This recipe can be made in advance, there are several steps to it but when it’s put together it tastes great. Just ask my niece, Ruby, it’s her favorite.
Preheat oven to 450F
Heat olive oil in a pan at medium heat
Add chickpeas, salt, pepper, garlic powder and red pepper flakes and mix until toasted
On a baking sheet toss cut up sweet potatoes in oil, salt, and pepper. Bake for 30 minutes
Prepare quinoa as directed on package
In a bowl combine and mix hummus, lemon and water
Build the Chickpea bowl with mixed greens, roasted chickpeas, sweet potatoes, quinoa, avocado and pumpkin seeds. Add dressing and enjoy!
