Thanks to my good friend Jyl for inspiring me to make this wrap. It’s an easy lunch to prepare and it’s full of delicious veggies.
Spread the ½ tbsp hummus on each tortilla.
Cut the avocado in half and remove the pit. Scoop out the avocado and spread ½ on each tortilla
Rinse and drain the chickpeas, add ¼ cup to each tortilla on one side and add pepper as desired.
Add the shredded carrots, diced peppers, cherry tomatoes, cucumbers and dates to each tortilla on one side.
Fold the tortilla (fold in the sides of the tortilla, almost enough so they touch but with an inch or so between them, so some of the filling is still showing. Bring up the bottom flap, then continue to roll).
