Enjoy a Peanut Butter Cookie Dough Bite made out of CHICKPEAS!!! Yes, I said chickpeas. Nutritious and delicious.

Ingredients

 15 Medjool Dates, pitted
 1 can organic chickpeas, drained and rinsed
 ½ cup Peanut Butter
 1 tsp Vanilla Extract
 ¼ cup Dark Chocolate Chips

Cooking Instructions

Place all ingredients in a food processor (except the chocolate chips). Process on high until a smooth dough forms.

Place dough in the freezer for 30 minutes (this will make the dough easier to roll).

Roll the dough into small balls (it helps to dampen your hands). Press a few chocolate chips into each ball.

Store in the fridge for up to one week. Enjoy!
